Ever notice how some meals don't just fill your stomach, they fill your soul. The kind of dish that shows up at family dinners, holiday tables, and I just need something warm today moments. Well today we're making one of those a broccoli casserole that's creamy, cheesy, crunchy on top, and honestly feels like a hug in a dish. Welcome back to Kitchen Stories where we turn everyday cooking into comfort, conversation, and a little bit of kitchen therapy. Today's recipe is a classic broccoli casserole. Simple ingredients, no stress, just real familiar food that tastes like home. If you've ever had a dish that brought everybody to the table without calling them twice, this is one of those. So let's get into it. First we start with the base. Grab two ten ounce boxes of frozen broccoli. Whole or chopped, whatever you've got on hand. In a pot, boil the broccoli with about a quarter cup of chopped onion until everything is tender. Once it's soft, drain it and transfer it into a casserole dish. Now we're building flavor. In a separate bowl, mix together one can of cream of mushroom soup with half a cup of milk. Stir it until it's smooth and creamy. Pour that mixture over the broccoli. Next, add half a cup of chopped onion and about a fourth cup of grated sharp cheese. That cheese is going to melt right into the casserole and bring everything together. Now for the crunch topping, take about six or more high ho ritz crackers or whatever your choice of crackers. Crush them up and mix them with two tablespoons of melted butter or margarine. Sprinkle that evenly over the top of your cashew. And now it goes into the oven. Bake at about 350 degrees for 25 to 30 minutes until it's bubbling golden and lightly crisp on top. What comes out is creamy underneath, crunchy on top, and comforting all the way through. And just like that, you've got broccoli casserole. Simple ingredients, minimal effort, maximum comfort. This is the kind of dish you don't just cook, you remember. You come back to it on cold nights, busy weeks, and days when you just need something familiar.
